Rhubarb and Ginger Crumble
Ingredients
10-12 stalks rhubarb
1 tabsp. golden caster sugar
100g plain flour
1 tabsp. golden caster sugar
50g margarine
2 tabsp. jumbo oats
2 tsp ground ginger
Method
Preheat oven to Gas 4/180C
1. Remove the leaves from the rhubarb and cut into large chunks.
2. Wash and place in an ovenproof dish with 1 tabsp. sugar
3. Microwave for 2 mins on high
4. In a large mixing bowl sieve the flour, add the sugar and margarine.
5. Using finger tips rub the margarine into the flour until it resemeble fine
breadcrumbs.
6. Add the ginger and oats - mix well.
7. Sprinkle the crumble mixture over the rhubarb.
8. Place in oven and cook for 15 - 20 mins until golden brown
9. Serve warm with custard or ice-cream
The best taste, especially if it is the first rhubarb of the season.
